1 Preheat the oven to 400°F.
2 On a rimmed baking pan, place the jalapeños, Anaheim chiles, poblano chile, onion, garlic, and tomatillos. Toss gently with the vegetable oil and roast for 25 minutes.
3 Transfer the roasted vegetables to a food processor and add the cilantro and lime juice. Purée on high until fairly smooth. Season with salt. Set aside or chill until ready to use. You can make this a day or two ahead of time, if desired, and refrigerate in an airtight container until ready to serve.
4 While the vegetables are roasting, in a heavy pot or skillet, heat 1 inch of vegetable oil until it registers 350°F to 375°F on a candy or deep-fry thermometer clipped to the side of the pot. Fry the tortillas, 8 pieces or so at a time, until they are golden brown and crisp. Transfer to a bowl and toss each batch with a little salt.
5 Serve the salsa with the hot chips.
